Step by Step
HOW TO PREPARE
YOUR DOUGH
Store Frozen
Store at 0°F / -18°C or below until you are ready to use them. Do not refreeze after thawing. Keep in original individual wrapping until ready to use.
Until needed
Refrigerator Thaw
Transfer dough balls from freezer to refrigerator. Allow approximately 24 hours to thaw fully under cold storage conditions.

Rest at Room Temp
Remove from refrigerator. Allow 60 minutes to rest at room temperature before stretching for the best texture and handling.

Stretch, Top & Bake
Stretch dough by hand or with equipment. Add your toppings and bake according to your oven type. See temperature and time guide below.

COMMON QUESTIONS
How is the dough shipped?
+Orders ship frozen in insulated packaging to help maintain product integrity during transit. Free shipping on orders $75 or more. Shipping rates and delivery windows are calculated at checkout.
Can I refreeze the dough after thawing?
+No — do not refreeze dough once it has been thawed. Once thawed, store under refrigeration and use within 5 days for best results.
What ovens can I use?
+Forno Medici dough works across deck ovens, convection ovens, conveyor ovens, conventional ovens, gas and wood-fired ovens. See the baking guide above for temperature and time references for each oven type.
Does the dough contain eggs or dairy?
+No — Forno Medici dough balls contain no eggs and no dairy. The dough contains wheat flour and may contain soy (from vegetable oil shortening). See the full ingredient list above.
What sizes are available?
+We currently offer 10 oz dough balls (ideal for larger artisan-style pizzas, approx. 12–14 inch). Foodservice operators can contact us for the full commercial SKU range from 100g up to 907g.

How long should I rest the dough before stretching?
+After thawing in the refrigerator for ~12-24 hours, remove the dough ball from the fridge and allow it to rest at room temperature for minimum 60 minutes before stretching. This allows the gluten to relax and the dough to become more pliable, resulting in an easier stretch and better texture.
